Shredded Zucchini Tacos with Sriracha Slaw for a Vegan Cinco de Mayo

Tacos, tacos, tacos! Can’t get enough. Can’t stop, won’t stop. So many possible options within the taco universe and it’s so easy to make them vegan and you can get delicious gluten free corn tortillas everywhere. If/when I do a food truck it will probably be a vegan taco masterpiece.

Cinco de Mayo is coming up and this is the perfect recipe to celebrate the holiday. Get some Dos Equis, tequila, margaritas, these tacos and some chips and guac and life will be good.

These have a decent kick to them, but I also like to add salsa or hot sauce on after the fact because I’m a sauce fiend. If you wanted to spice them up a bit more you could just up the cayenne.

Shredded Zucchini Tacos with Sriracha Slaw for a Vegan Cinco de Mayo Recipe

  1. Put the tomatoes, cumin, cayenne pepper, oregano, garlic powder and 1/3 of the smoked salt into a food processor and process until smooth.

  2. Heat butter in a large pan over medium-high heat. Add the shallots and cook for 2-3 minutes until they start to brown.
  3. Stir in the zucchini and turn the heat to medium. Cook for another 3-4 minutes.

  4. Slowly pour in the tomato mixture into the pan. Stir to combine all ingredients and simmer until the sauce thickens.
  5. Pulse the pumpkin seeds a few times in the food processor then stir them into the taco mixture, add the remaining smoked salt. Cook stirring frequently for another 5 minutes.

  6. To make your taco first heat up the tortilla on the open flame of a gas stove or you can put mutliple on a tray in the oven at 300 degrees. Put a few leaves of the baby kale down first, then a nice scoop of the zuccini mixture and top it off with the slaw. Enjoy that shit!
