Heirloom Tomato and Fennel Salad in a Jar

If you follow me on Instagram, you know I’m a huge fan of the salad in a jar concept for prepping salad ahead of time and making it easily portable. This simple salad is refreshing and pairs really well with the citrus basil avocado salad dressing I posted up a couple weeks ago.

This is a single serving salad as I am just one dude, but you can easily increase the ingredient amounts to feed more people. This would probably be good for two if you were eating it as a side salad.

I used romaine for the greens, but it would also be good with spinach or butter lettuce.

What do you think? Did you have it with a different dressing? Add or subtract something?

Let me know in the comments!
