Chopped Parsley Salad (Grain Free Tabouleh) with Avocado

Got a ton of parsley and don’t know what to do with it? This parsley salad is perfect to put on a sandwich, a wrap, with pita, with crackers or just on it’s own. It’s super fresh tasting and will last in your fridge for about 5 days.

You can also adjust the quantities to your liking if you want more parsley or avocado for example. A little chopped onion can be a nice addition as well, I just wasn’t feeling it for this.

Instructions

  1. Add all the ingredients in a large mixing bowl. Combine well. Add salt and pepper to taste and refrigerate for at least an hour before serving.

    This was a great salad, perfect for Passover! I made it with flat leaf parsley and the texture was a little weird. I would definitely recommend curly parsley.

    • Awesome! I made it with a couple different kinds of parsley because that’s what I had, but good to know that it was a little weird! Glad you liked it anyway!
