This salad dressing is a nice tart complement to any basic mixed greens salad and a great use of extra chives (which if you buy chives, you probably have extra). I used it with mixed greens from the farmers market along with some cherry tomatoes and fresh cucumber. Very simple, but a great side salad for any summer main course.
You can achieve similar success using other herbs like basil or thyme with the lemon combination. As I’ve said before, I highly recommend using an immersion blender for making dressings and sauces. It’s so fast, easy and tastes way better than when you buy dressing in a store.

Ingredients
- 2 tablespoons lemon juice about one medium lemon
- 3 tablespoons olive oil
- 2 tablespoons chives fresh, chopped
- 1 tablespoon dijon mustard
- 1 tablespoon rice vinegar
- salt and pepper to taste
Instructions
- Combine all ingredients in a blender, food processor, or using a hand/immersion blender. Toss on your favorite greens and enjoy!
